First and foremost, HAPPY BIRTHDAY DAD! :) The first thing I did when I jumped out of bed today was call home, us siblings always try to be the first to say HBD ;). We also always talk about whether or not the groundhog will see his shadow. I joked with my dad that I had left over birthday cake from my birthday celebration last weekend and that we could eat cake together tonight.
Speaking of birthday cake, last week was my birthday and it was so great to have had the chance to share it with family and friends. My brother David and his girlfriend, Laura flew down from Columbus to spend the weekend with me and on Sunday evening the two of them cooked me an amazing dinner to be followed up with my mom’s infamous birthday cake.
I was teasing my mom a few weeks ago, that I haven’t had her birthday cake in years, that’s my own doing though as I haven’t been in Columbus on my actual birthday in years! But this year I was in for a treat. My mom sent down the “tools” for her cake as well as the recipe for her out-of-this-world icing. Laura was a little nervous, she had the task of making the cake, “No pressure” she said to me with a smile.
Needless to say the meal and the cake were incredible. And I felt so spoiled that night and so loved to be honest. After a weekend of fun, good food (and good as in taste not so much healthy lol), and vino, it was time to get back to the 80/20 or 90/10 rule yesterday after they left.
Two nights ago I found myself looking up recipes online after my evening workout and dinner. I usually try to create some sort of protein dessert using protein powder. I am a baker at heart and love coming up with new ideas. Sometimes they work and well sometimes they taste like chalk ;).
As I was scrolling through I came across this blog called TheBigMan’sWorld and found this recipe for Healthy Birthday Cake Protein Cookies. Now, I hardly follow a recipe to a t and decided to make up my own version. Oh, and another thing, I usually bake with what I have around the house. So in this case, I used what I had.

1 scoop Optimum Nutrition Birthday Cake Protein Powder
2 tablespoons Coconut Flour
1 tablespoon 2% milk (I didn’t have any almond mik)
1 tablespoon peanut butter
1 packet Splenda
1 tablespoon Agave Syrup Five by Madhava
Dash of salt
Preheat the oven at 350 degrees. Throw all of the ingredients in a bowl. Mix up well and it will take on a cookie dough consistency. Spray a cookie sheet with PAM. Place dough in a cookie shape on pan. Bake for 10 minutes. Enjoy!
