Protein Pancake: Back to the Basics

Who doesn't love pancakes for breakfast?! I was so excited to get home this morning after my run to make a giant banana protein pancake and spread some nut butter on top. My game plan was to get that puppy made, pack up my bag, and head to Starbucks. I was so excited to get set up for the day, get my Americano, and eat my breakfast. Only to open my backpack and realize I left my protein pancake at home! 

 

Oh well ... the least I can do is share my go -to recipe right?

 

This has become one of my staples for breakfast.  In fact, I think I have gotten making these puppies down to a science, where I find myself making them fairly often during the week as well.  My normal routine is coffee, workout, pancakes and more coffee – in that exact order.

 

The great thing about this recipe is that it is so versatile – it can be adapted to create so many different kinds of pancakes and provide a pretty good nutrient profile. I love having one after a workout - as in this morning :) Except that I forgot it at home! 

 

 

 

 

Here are the main ingredients:

  1. ¼ -1/2 cup egg whites

  2. 1 scoop protein powder

  3. ¼ cup oats

  4. dash of baking powder

  5. dash of vanilla extract

  6. 1 packet of Truvia or other low/no calorie sweetner

 

Directions:

  1. Mix everything in a bowl

  2. Spray frying pan with pam and put on stove

  3. Pour batter in pan

  4. Wait for the bubbles and flip

  5. Serve on a plate

My go to toppings for sure are I Can’t Believe It’s Not Butter spray and sugar free syrup. Some days I am feeling a little adventurous so I will use my favorite nut butters (by Peanut Butter & Co) and spread on top.  And then there’s always whipped cream too!

 

One of my favorite parts about this recipe, as I mentioned earlier, is that it is so interchangeable. Recently, I have been alternating between protein flavors: somedays I will use Birthday Cake other Banana Cream. On the Banana Cream days I will add in blueberries or powdered peanut butter. If I had an extra hard workout, I will through in half of a banana.

 

With fall here, pumpkin is always a great addition in conjunction with pumpkin pie spice.
