Happy Fall! As I have mentioned before one of my favorite things about fall is pumpkin! From pumpkin flavored teas and coffee to pumpkin treats, there are so many amazing recipes that include pumpkin. One of my absolute favorite pumpkin treats is pumpkin pancakes.
One of my favorite fall Saturday morning traditions is to sleep in a, brew a cup of coffee and head to the gym for a workout. Saving the best part for last is coming home to make pumpkin protein pancakes post workout accompanied with more coffee of course!
So that is exactly what I did this morning and thought, hey why not share this delicious recipe with everyone. I have adopted the recipe a bit from my dear friend Mara Berman (she is a wealth of knowledge for all things physical therapy, training, and nutrition). These are gluten free and taste delicious. To up the protein in the pancakes, throw in a scoop of your favorite vanilla flavored protein powder.
As for ingredients (serving size 1):
1 tablespoon almond meal
1 tablespoon coconut flour
¼ teaspoon baking powder
1 tablespoon coconut oil (melted)
¼ cup pumpkin puree
1 teaspoon Truiva baking blend
½ teaspoon vanilla extract
1 tablespoon unsweetened vanilla almond milk
Dash cinnamon, all spice, and pumpkin pie spice
Blend all ingredients in a bowl. Heat pan and spray with PAM. Pour batter onto pan. Makes approximately 3 pancakes.
